1. Mint Chocolate Cheese Pie

What you need:

  • 1 cup cream cheese, softened
  • 3/4 cup chocolate covered creamy mints, chopped
  • 3/4 cup brown sugar
  • 3 medium eggs
  • 1 9-inch prepared graham cracker crust
  • 4-5 fresh mint leaves, finely chopped
  • 1 tsp. vanilla extract

Combine the cream cheese, brown sugar and mint leaves in a large bowl and beat with an electric mixer until smooth. Add the eggs one at a time then stir in vanilla extract. Beat until all ingredients are well-combined and mixture is smooth. Pour the mixture into the graham cracker crust. Top the mixture with the chopped chocolate-covered mints and bake the pie in a pre-heated oven (350 degrees Fahrenheit) 40 to 45 minutes. When ready, allow to cool on a wire rack for at least 15 minutes then chill in the refrigerator for at least 8 hours to overnight.

2. Classic Cinnamon Pastry

What you need:

  • 1 cup cream cheese
  • 1 cup brown sugar, divided
  • 3/4 cup butter, melted
  • 1 egg yolk
  • 3 tbsps. ground cinnamon
  • 18 slices bread, crust removed

Mix cream cheese, 1/4 brown sugar and egg yolk in a medium bowl. Using an electric mixer, beat until smooth then set aside. In a separate bowl, combine 1/4 cup brown sugar and ground cinnamon. Spread one side of a bread slice with the cream cheese mixture then roll “jelly roll” style. Dip in melted butter then coat with the sugar and cinnamon mixture evenly. Repeat the steps with all the bread slices. Arrange the rolls in a baking sheet, cover with foil then refrigerate until frozen. When ready, remove the foil then bake the rolls in a pre-heated oven (350 degrees Fahrenheit) for 25 minutes or until golden brown.

3. Creamy Allspice Frosting

What you need:

  • 4 cups confectioner’s sugar
  • 1/4 cup cream cheese, softened
  • 1/3 cup butter, softened
  • 2 tbsp. milk
  • 1 tsp. vanilla extract
  • 3/4 tsp. ground allspice

Combine the cream cheese, butter and ground allspice in a medium bowl. Stir in the milk, the confectioner’s sugar and the vanilla extract gradually. Stir until the mixture is light, smooth and spreadable. Use on top of cookies, brownies or ready mix cakes.
